Eating and cooking utensils of the travelers along the Santa Fe Trail in the early 1840's are described by Josiah Gregg (Reference).  "...the kitchen and table wares of the traders usually consist of a skillet, a frying-pan, a sheet-iron camp-kettle, a coffee-pot, and each man with his tin cup and a butcher's knife."
